FlapJacks....

I love to eat them.
I love them moist and caramel-y with some sort of fruit in them.... And i have been making them since i was child (necking half the mixture before it was cooked) and playing 'cookery programmes' with my friend Debbie.
So, why, Oh why, Oh why, Oh why do i still muck them every single time??
Care to give me your recipe and method? for whichever i use - i am damned.....
Answers via the comments / on your blogs / via the heavens, however you please.... but PLEASE, help me!?

Someone told me recently to use a potato masher to lightly tamp down the flapjacks as soon as they come out of the oven - that way they hold together better. Works for me! They look lovely. x

I always always did that!!

I use Hugh FW's now!

I think the trick is to use a shocking amount of golden syrup, sugar and butter, till the mixture is really wet...thats why I use Hugh's because I need someone more authorative then me to make me put that much in! and press it down loads before and after and don't attempt removal till cool??

come round this week???

I use a Rachel Allen recipe which, like Mrs B's, has a scary amount of butter and sugar in it, oh but it's heaven in a bar!
I want some now I'm discussing it but am craving Miss Dahl's peanut fudge more.

my advice is to not use jumbo oats.

I have had this problem on numerous occasions...dissapointing until you realize it makes amazing granola when eaten in a bowl with milk!

The one time my flapkacks were perfect (and I mean perfect, my family all looked sort of flapjack-like afterwards we gobbled them up so fast!) was when I mashed a banana in there - it worked perfectly as a binding agent, and no need for scary amounts of butter either! (You can taste a hint of banana, but personally I see that as only a good thing!)

Good luck and, of course, keep trying - only good things can come of attempting to make flapjack!
